Pullulan is an extracellular water-soluble viscous polysaccharide similar to pectin and xanthan gum produced by fermentation of Aspergillus oryzae.

    Introduction

    Pullulan is an extracellular water-soluble viscous polysaccharide similar to pectin and xanthan gum produced by fermentation of Aspergillus oryzae. It is a special microbial polysaccharide discovered in 1938.Linear, neutral glucan consisting mainly of maltotriose units connected by -1,6 glycosidic bonds.

    It is produced by fermentation from a food grade hydrolysed starch using a non-toxin-producing strain of Aureobasidium pullulans. After completion of the fermentation, the fungal cells are removed by microfiltration, the filtrate is heat-sterilised and pigments and other impurities are removed by adsorption and ion exchange chromatography.

    Pullulan is a stable, non-ionic and non reducing polysaccharide that is easily soluble in water and can be used as a viscous, neutral, and non gelling aqueous solution. The film made is transparent, colorless, odorless, non-toxic, tough, highly oil resistant, edible, and can be used for food packaging. Its luster, strength, and flexural performance are better than those of films made from high chain starch.

    Due to its unique structure and properties, this polysaccharide has broad application prospects in industries such as medicine, food, petroleum, and chemical. Due to its ability to be degraded and utilized by microorganisms in nature without causing environmental pollution, it is known as a pollution-free plastic. 

    Features

    Pullulan is structurally elastic and has a relatively high solubility. Pullulan has strong film-forming properties, gas barrier properties, plasticity, and viscosity, and has excellent characteristics such as easy solubility in water, non-toxic and harmless, colorless and odorless. It has been widely used in fields such as medicine, food, light industry, chemical industry, and petroleum.

    Application in the preservation of agricultural products

    Due to its excellent film-forming properties, pullulan polysaccharides can be widely used for the preservation of agricultural products such as fruits, vegetables, and eggs.

    Application in the preservation of seafood products

    Research has shown that short stem mold polysaccharides, as a new type of marine product membrane protector, can effectively inhibit the accumulation of volatile base nitrogen in the body of marine products, and also have a good protective effect on water evaporation in the body of marine products.

    Application in the food processing industry

    As a low calorie food raw material for staple food and pastries, as well as an improver and plasticizer for food quality, it is widely used in the food industry.

    Application in the field of environmental protection

    The product has been applied to the purification treatment of high turbidity water, the first level enhanced treatment of urban sewage, and the treatment of wastewater in monosodium glutamate production, forming a complete process and technology.
