Introduction
Aspartame is a white, odorless, crystalline powder.
It is approximately 200 times sweeter than sucrose, meaning the amount required to achieve the same sweetness is extremely small, thus contributing almost no calories.
Although aspartame itself contains about 4 kilocalories per gram, it is considered a “zero-calorie” or “low-calorie” sweetener due to its minimal usage.
Its sweetness profile is pure and very similar to sucrose, without the bitter aftertaste (unlike saccharin), though the sweet sensation lasts longer.
However, aspartame undergoes hydrolysis under prolonged exposure to high temperatures or acidic/alkaline conditions, leading to loss of sweetness. As a result, it is not suitable for products requiring extended high-temperature baking (e.g., biscuits, cakes) but can be used in briefly heated or post-heating applications.
