Gellan Gum is a high molecular weight polysaccharides processed by a pure culture fermentation of a carbohydate by Pseudomonas elodea, purified by recovery with Isopropyl Alcohol or Ethanol, dried, and milled.

Main raw materials of producing gellan gum are Corn/Maized based glucose powder, Soya Based / Pea Based protein and Yeast Extract. High Acyl Gellan Gum  is in natural organization without deacylation.The organization of High Acyl Gellan Gum is a premium quality dark yellow/off white powder.

High Acyl Gellan Gum is perfect for netural pH UHT and HTST Dairy Beverage , milk, dairy beverages, yoguhrt, plant protein beverages, milk free drinks. High Acyl Gellan Gum could also be applied in meat products to enhance the elastic characteristics when combined with Konjac Gum and Carrageenan. According to different application,HA Gellen Gum could be divided into varieties of types:HA371,HAP(S),HAP(P),HAM.

High Acyl Gellan Gum is of below features:
1.Viscosity of High Acyl Gellan Gum can be as high as 7000cp, with 4000cp is our min. standard;
2.Gel Strength of High Acyl Gellan Gum can be as high as 700g/cm2 according to customers' specified requirements;

5.Good combination with modied starch to be used as thickener;
6.Good compatibility  with other ingredients and hydrocollids;
7.Very low dosage can help to for "fluid gels" to be as suspension or stabilizing agent in beverages:

Typical Dosage:
Regular recommended dosage is 0.025%-0.1%.
Blending with other hydrocolloids is advised to increase the performance.
Dispersion & Dissolution:
1.Dispersion: High Acyl Gellan Gum can be dispersible readily into milk or other beverage systems using regular mixing devices.The product can be activated by heating treatment such as UHT, HTST, pasteurization and retort procession.
2. Dissolution: High Acyl Gellan Gum is improved by heating treatment (time, temperature),shear stress (stirrer, homogenizer). A complete dissolution can be easily obtained at around 85℃-90℃ for 20-30minutes.
